Meet the Butcher: Mathews Artisan Butcher

Meet the Butcher: Mathews Artisan Butcher

Fleminton, Victoria

Some butcher shops stand out because of their products. Others stand out because of their people. Mathews Butchers manages to do both.

Located in Fleminton, Mathews Butchers is a visually impressive store that catches your attention. The displays are beautifully presented, showcasing not only quality meat but also the craftsmanship and pride that goes into the trade.

During my visit, I had the opportunity to spend some time speaking with Mathew, the owner. As a third-generation butcher, Mathew continues a family tradition that has been built over decades. His passion for the industry is evident the moment you start talking about meat, customers and the history behind the business.

One of the most fascinating stories from my visit was learning about their traditional Maltese pork sausage recipe. This family recipe has been passed down through generations and has remained in the family for over 100 years. In a world where many products become commercialised, it was refreshing to see a business preserving a piece of family history through its food.

Adding to the quality of the store is the influence of Bernard Holbury, one of Australia's most respected butchers. His craftsmanship and attention to detail are clearly reflected throughout the displays, helping create a butcher shop that feels professional, premium and genuinely passionate about quality.

The Braai Test

The Scotch fillet was everything you hope for from a premium steak - beautifully marbled, tender and packed with flavour.

The lamb fillet rosemary and mint skewers were a standout. The rosemary and mint complemented the lamb perfectly and created a combination that felt made for the braai.

The lamb patties were juicy, full of flavour and ideal for a relaxed family meal around the fire.

But the highlight of the visit had to be the traditional Maltese pork sausages. Knowing the history behind the recipe made them even more special. Full of flavour and backed by over a century of family tradition, they were unlike anything you'll find in a supermarket.
