What I Picked Up
For this braai session I kept it simple and grabbed a couple of ribeye steaks along with their bacon and cheese sausages.
The ribeye's immediately stood out with solid marbling and a great thickness - exactly what you want for cooking over hot coals. The bacon and cheese sausages looked dangerous in the best possible way. You already know before they hit the grill that somebody at the braai is going back for seconds.
The Braai Test
The ribeyes handled the fire beautifully. Nice crust on the outside while still staying juicy and tender in the middle. Good marbling always tells the story once the fat starts rendering over the flames.
The bacon and cheese sausages were an absolute winner on the braai. Crispy casing, smoky flavour from the bacon, and just enough melted cheese coming through without becoming greasy.
Simple food done properly over fire.
